Winemaking is carried out with the use of a quantity of sulfur dioxide less than half the quantity required by Italian law and products from grapes grown with organic farming criteria. Our grapes are 100% Vernaccia and hand-harvested in crates. After the static separation of the lees at a low temperature, fermentation begins at a controlled temperature of 15° C. Once the evolution of the sugars is complete, the wine is decanted and cleaned until it is bottled.

The globalized food industry involves the production and distribution of foods with standardized taste and aroma characteristics that can appeal to a large number of consumers and be distributed throughout the world. These types of foods, including wine itself, often have a savory flavor and nutritional characteristics that are not consistent with a good diet or even contain dubious if not actually toxic substances. Fortunately, there are more and more people who use time and resources to eat and drink healthily and rediscover the flavors of the Italian food and wine tradition.
